When you want a tasty supper without the fuss, this easy, quick, and healthful Chicken Fajita dish is ideal. Packed with protein, fibre, and good fats, this 20-minute meal is made with lean chicken, vibrant bell peppers, and a mixture of spices.
Ingredients:
- 2 boneless, skinless chicken breasts, sliced
- 1 red bell pepper, sliced
- 1 yellow bell pepper, sliced
- 1 green bell pepper, sliced
- 1 small red onion, sliced
- 2 tbsp olive oil
- 3 tsp Fajita seasoning
- Salt & black pepper to taste
- Juice of 1 lemon
- Spinach or whole wheat tortillas
- Fresh coriander (garnish)
Instructions:
- In a pan, heat 1 tablespoon of olive oil over medium heat. Cook till golden and cooked through after adding the chicken and seasoning with salt, pepper and fajita seasoning. Take out and put aside.
- Add the onion, bell peppers, and the remaining olive oil to the same pan. Sauté until crisp but not soft.
- Squeeze fresh lemon juice over the fajitas, stir everything together, then add the chicken back to the pan.
- Garnish with fresh cilantro and serve on warm spinach or whole wheat tortillas.
