Description:
When you want a tasty supper without the fuss, this easy, quick, and healthful Chicken Fajita dish is ideal. Packed with protein, fibre, and good fats, this 20-minute meal is made with lean chicken, vibrant bell peppers, and a mixture of spices.

Ingredients:

  • 2 boneless, skinless chicken breasts, sliced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 green bell pepper, sliced
  • 1 small red onion, sliced
  • 2 tbsp olive oil
  • 3 tsp Fajita seasoning
  • Salt & black pepper to taste
  • Juice of 1 lemon
  • Spinach or whole wheat tortillas
  • Fresh coriander (garnish)

Instructions:

  1. In a pan, heat 1 tablespoon of olive oil over medium heat. Cook till golden and cooked through after adding the chicken and seasoning with salt, pepper and fajita seasoning. Take out and put aside.
  2. Add the onion, bell peppers, and the remaining olive oil to the same pan. Sauté until crisp but not soft.
  3. Squeeze fresh lemon juice over the fajitas, stir everything together, then add the chicken back to the pan.
  4. Garnish with fresh cilantro and serve on warm spinach or whole wheat tortillas.
